In a Boston Shaker, muddle mint leaves to release the flavors. Then add freshly squeezed lime juice, passion fruit juice (such as Goya), Barenjager Honey liqueur and Arrogante Anejo tequila. Stir well to combine.
Add simple syrup and a handful of ice and shake vigorously for 10 to 15 seconds. Taste and adjust the sweetness by adding more simple syrup if desired.
Strain the cocktail through a fine mesh strainer into a tumbler glass filled with ice cubes. Garnish with a sprig of mint.
