Spread kosher salt on the plate. Moisten the outside rim of a rocks glass with a lime wedge and dip the glass into a plate of kosher salt to evenly coat the edges. Fill the glass with large chunks of ice and set the glass aside.
In a Boston shaker, combine Arrogante Blanco tequila, freshly squeezed lime juice, Cointreau and prickly pears syrup. Prickly pear syrup will give the cocktail its bright fuchsia color and sweet taste. Add a handful of ice and shake vigorously for 10 to 15 seconds.
Strain the cocktail into the prepared glass. Garnish the cocktail with a fresh mint leaf and a slice of orange. Serve with a straw.
