With a large spoon, scrape out and discard honeydew seeds. Chop the honeydew into small chunks and measure one cup.
In a blender, combine honeydew melon, freshly squeezed lime juice, Domaine Canton Ginger liqueur, sweet and sour mixture, ground pink peppercorns and Arrogante Reposado tequila. Process in a blender until smooth. While continuing to blend, start adding ice, several pieces at a time, until the cocktail reaches the desired consistency.
Freeze the canister for 15 to 30 minutes and swirl again in a blender before serving. Pour the drink in a glass and garnish with a honeydew spear.
